Bourbon Banana Cornbread

Bourbon Banana Cornbread

Sweet, rich, and caramelized to perfection, this Bourbon Banana Cornbread from ambassador Frank Campanella is a next-level dessert with a subtle kiss of smoke. Buttery brown sugar bananas melt into the base while the cornbread bakes up soft and fluffy on top—then it all flips into a sticky, golden masterpiece.

Steps

  1. In a bowl, combine cornbread mix, egg, evaporated milk, mayonnaise, and brown sugar. Mix until just combined—do not overmix.
  2. Peel the bananas and slice them lengthwise so they lay flat.
  3. In a pan over medium heat, melt the butter and stir in the brown sugar. Cook until bubbling and caramelized, then remove from heat and stir in bourbon if using.
  4. Lay the bananas across the bottom of the pan, covering it completely.
  5. Pour the cornbread batter evenly over the bananas.
  6. Preheat your smoker to 350°F using Bear Mountain Red, White & BBQ pellets. Place the pan in the smoker and cook for about 40 minutes, or until the cornbread is set.
  7. Remove and let rest for 30 minutes.
  8. Carefully invert onto a cutting board or serving tray so the caramelized bananas are on top.
  9. Slice and serve as is, or top with vanilla ice cream, caramel drizzle, and an extra splash of bourbon.

Ingredients:


Banana Base

  • 6 bananas 
  • 1 stick butter 
  • ⅓ cup brown sugar 
  • 2 oz bourbon (optional, but recommended) 


Cornbread

  • 1 box cornbread mix 
  • 1 egg 
  • ½ cup evaporated milk 
  • 2 TBSP mayonnaise 
  • ¼ cup brown sugar
