Smoky birria meets crispy comfort Bear Mountain ambassador Brian Gerwig built layers of rich, chili-infused flavor starting with a seared chuck roast, slow-braising it in a blend of peppers, spices, and tomatoes over Pecan pellets for that perfect wood-fired kick. The result? Tender, juicy birria piled high over golden tater tots, topped with cheese, onion, and cilantro! Doesn’t get much better!

Steps

  1. Season the chuck roast heavily with salt, pepper, and garlic powder. Cut into 6 equal pieces. Sear the chuck roast on a griddle or cast-iron pan to get a good crust on all sides then remove. 
  2. Sauté 1 onion until translucent. 
  3. Preheat your smoker to 350°F. 
  4. Get a Dutch oven and place it on your smoker. Add in onions, garlic cloves, and chipotle peppers with adobo sauce, then cook for 2 minutes.
  5. Add in the diced tomatoes, beef broth, water, guajillo peppers, arbol chilis, and ancho chilis. Then season with paprika, cloves, coriander, oregano, cinnamon sticks, salt, and bay leaves. 
  6. Once the chilis have rehydrated, remove the cinnamon sticks and bay leaves then use an immersion blender to blend until smooth. 
  7. Add the seared chuck roast pieces into the Dutch oven and cook uncovered for a couple hours. 
  8. After a few hours, place the lid on the Dutch oven and cook for another 2-3 hours or until the chuck roast is fall apart tender. 
  9. Cook the tater tots according to package directions.
  10. Once done, shred the beef and top the tater tots. Add all of your favorite birria toppings and enjoy!

  • 1 chuck roast
  • salt
  • pepper
  • garlic powder
  • 1 onion – diced
  • 5 garlic cloves – whole 
  • 1 can of chipotle pepper in adobo
  • 28 oz. diced tomatoes
  • 1 quart beef broth
  • 1 quart water
  • 3 guajillo peppers 
  • 5 arbol chilis
  • 3 ancho chilis
  • 1 tsp paprika
  • 1 tsp cloves
  • 1 tsp coriander
  • 1 tsp oregano
  • 2 cinnamon sticks
  • 2 tsp salt
  • 2 bay leaves
  • 1 bag frozen tater tots
