Bear Mountain ambassador Brian Gerwig serves up smoky comfort with this Birria Sandwich. Tender, wood-fired beef is braised in a rich chili consommé, then piled on a toasted bun with mayo, melted cheese, onion, and cilantro. Don’t forget the dunk—it’s made for dipping!

Steps

  1. Season the chuck roast heavily with salt, pepper, and garlic powder. Cut into 6 equal pieces. Sear the chuck roast on a griddle or cast-iron pan to get a good crust on all sides then remove.
  2. Sauté 1 onion until translucent.
  3. Preheat the smoker to 350°F.
  4. Get a Dutch oven and place it on the smoker. Add in onions, garlic cloves, and chipotle peppers with adobo sauce, then cook for 2 minutes.
  5. Add in diced tomatoes, beef broth, water, guajillo peppers, arbol chilis, and ancho chilis. Then season with paprika, cloves, coriander, oregano, cinnamon sticks, salt, and bay leaves.
  6. Once the chilis have rehydrated, remove the cinnamon sticks and bay leaves then use an immersion blender to blend until smooth.
  7. Add the seared chuck roast pieces into the Dutch oven and cook uncovered for a couple hours.
  8. After a few hours, place the lid on the Dutch oven and cook for another 2-3 hours or until the chuck roast is fall apart tender.
  9. Once done, shred the beef and toast the buns. Add mayonnaise shredded beef, white American cheese, cilantro, and onion to the bun. Dunk in the consume and enjoy!

  • 5 garlic cloves – whole 
  • 1 can of chipotle pepper in adobo
  • 28 oz. diced tomatoes
  • 1 quart beef broth
  • 1 quart water
  • 3 guajillo peppers 
  • 5 arbol chilis
  • 3 ancho chilis
  • 1 tsp paprika
  • 1 tsp cloves
  • 1 tsp coriander
  • 1 tsp oregano
  • 2 cinnamon sticks
  • 2 tsp salt
  • 2 bay leaves
