Birria California Burrito

Rich, smoky, and absolutely loaded, this Birria California Burrito takes classic birria and Bear Mountain ambassador Brian Gerwig  cranks it up with crispy tater tots, melty cheese, and a dunk-worthy consommé. Slow-braised chuck roast gets deep flavor from dried chiles and warm spices, then picks up a balanced kiss of smoke from Bear Mountain Tailgating Blend pellets for next-level color and depth.

Steps

  1. Season the chuck roast generously with salt, pepper, and garlic powder. Sear on a hot griddle or grill until a crust forms on all sides, then remove and set aside.
  2. Sauté the diced onion until translucent. Add the garlic and chipotle peppers in adobo and cook for about 2 minutes until fragrant.
  3. Stir in diced tomatoes, beef broth, water, guajillo chiles, árbol chiles, and ancho chiles. Season with paprika, cloves, coriander, oregano, cinnamon sticks, salt, and bay leaves. Simmer until the chiles are softened.
  4. Remove the cinnamon sticks and bay leaves, then use an immersion blender to blend the sauce until smooth.
  5. Return the seared chuck roast to the Dutch oven with the sauce. Add Bear Mountain Tailgating Blend pellets to the hopper and cook uncovered at 350°F until the pellets burn out and the roast picks up smoke and color.
  6. Cover the Dutch oven and continue cooking for 2–3 hours, until the beef is fall-apart tender. Remove the beef and shred finely, reserving the consommé.
  7. To assemble, layer a tortilla with tater tots, shredded beef, shredded cheese, chipotle cream, cilantro, and onion. Wrap tightly, slice in half, and serve with the warm consommé for dipping.

  • 1 chuck roast (3–4 lb)
  • Salt, pepper & garlic powder, to taste
  • 1 onion, diced
  • 5 cloves garlic
  • 1 (7 oz) can chipotle peppers in adobo
  • 1 (28 oz) can diced tomatoes
  • 1 quart beef broth
  • 1 quart water
  • 3 guajillo chiles
  • 5 árbol chiles
  • 3 ancho chiles
  • 1 TSP paprika
  • 1 TSP ground cloves
  • 1 TSP ground coriander
  • 1 TSP dried oregano
  • 2 cinnamon sticks
  • 2 bay leaves
  • 2 TSP salt
  • Large flour tortillas
  • Tater tots, cooked
  • Shredded cheese
  • Chipotle cream
  • Chopped cilantro
  • Diced onion
