Beer Braised Bratwurst Sandwiches

Simple, smoky, and packed with flavor, these bratwursts from ambassador Joe DiApice are braised in beer and onions over live coals before finishing directly on the grill for perfect color and snap. Serve them on a soft pretzel bun with mustard for the ultimate backyard classic.

Steps

  1. Slice the yellow onion and spread it evenly in the bottom of an aluminum pan.
  2. Place the bratwursts on top of the onions and season generously with BBQ rub.
  3. Pour the beer into the pan and cover tightly with aluminum foil.
  4. Fire up your grill using Bear Mountain Lump Charcoal and place the pan over direct coals. Braise the bratwursts for 1 hour.
  5. Remove the bratwursts from the pan and place them directly over the coals to grill until they develop good color and char.
  6. Place the bratwursts on pretzel buns, top with braised onions and yellow mustard, and serve warm.
