BBQ Chicken Katsu
A popular breaded and fried Hawaiian dish, this BBQ spin on Chicken Katsu is easy to make and even easier to enjoy.
Prep Time: 30 minutes (or overnight with the brine)
Cook Time: Approx. 1.5 hours
Ingredients
-Chicken Thighs-Pickle Juice Brine
-Bad Bones Wicked Chicken Rub or your favorite chicken rub
-Katsu Sauce
-Bear Mountain BBQ Bold BBQ pellets
Instructions
- Brine the chicken thighs overnight in the pickle juice (you can skip this step if you do not have brine)
- Remove the chicken from the brine and pat dry
- Rub the chicken with Bad Bones Wicked Chicken Rub and let it sit for 15-30 minutes
- Set your grill or smoker to 225 degrees and pour in Bear Mountain Bold BBQ pellets
- Smoke the chicken to an internal temp of 145 degrees
- Increase the temperature to high setting and grill the chicken to 165 degrees internal temp
- Remove and let rest 15 minutes before enjoying
