BBQ Chicken Katsu

BBQ Chicken Katsu

A popular breaded and fried Hawaiian dish, this BBQ spin on Chicken Katsu is easy to make and even easier to enjoy.

Prep Time: 30 minutes (or overnight with the brine)
Cook Time: Approx. 1.5 hours

Ingredients

-Chicken Thighs
-Pickle Juice Brine
-Bad Bones Wicked Chicken Rub or your favorite chicken rub
-Katsu Sauce
-Bear Mountain BBQ Bold BBQ pellets

 

Instructions

  1. Brine the chicken thighs overnight in the pickle juice (you can skip this step if you do not have brine)
  2. Remove the chicken from the brine and pat dry
  3. Rub the chicken with Bad Bones Wicked Chicken Rub and let it sit for 15-30 minutes
  4. Set your grill or smoker to 225 degrees and pour in Bear Mountain Bold BBQ pellets
  5. Smoke the chicken to an internal temp of 145 degrees
  6. Increase the temperature to high setting and grill the chicken to 165 degrees internal temp
  7. Remove and let rest 15 minutes before enjoying
