  1. Coat the chicken tenderloins with spicy mustard and season evenly with BBQ dry rub. Let marinate for about 30 minutes.
  2. Preheat your pellet grill to 275°F using Bear Mountain Gourmet Blend pellets.
  3. Place the chicken tenderloins on the smoker and cook for 25 minutes. Flip, brush with BBQ sauce, and continue cooking for 15 minutes. Flip once more, brush the other side with sauce, and cook an additional 5 minutes, or until fully cooked.
  4. Remove the chicken from the grill.
  5. Assemble the Bird Dawgs by placing a smoked chicken tender into each hot dog bun. Top with coleslaw, pickled jalapeños, and a drizzle of spicy mayo. Serve warm.
