BBQ Beef Loaded Potatoes

Hearty, smoky, and downright satisfying — these BBQ Beef Loaded Potatoes from Bear Mountain ambassador Nick Nesgoda are a backyard favorite! Piled high with tender smoked beef, melty cheese, and all your favorite toppings, they’re an easy way to turn baked potatoes into a full-on barbecue feast.

Steps

  1. Preheat the pellet grill to 250°F. 
  2. Cube the chuck roast and coat with Bachan’s as a binder. Season with SPG and BBQ rub. 
  3. Place seasoned chuck roast pieces onto a wire rack and place onto the smoker and cook for 3 hours. Spritz every hour with Dr. Pepper. 
  4. After 3 hours remove from the smoker and place the chuck roast pieces into a foil pan with butter, and more Bachan’s. Wrap with foil and place back in the smoker for 2 more hours. 
  5. Bake the potatoes and cut them down the middle lengthwise. Scoop out the inside and place into a bowl to mix with butter, pickled jalapenos, cheddar cheese, SPG and ranch. 
  6. Spoon the mixture back into the potato skins and bake for 15 minutes at 350°F.
  7. Remove the beef from the smoker and shred. 
  8. Assemble the potatoes with beef, green onions, and ranch. Enjoy!
