Bacon-Wrapped Pimento Cheese Crackers

Crispy, smoky, creamy, and downright addictive—these bacon-wrapped pimento cheese crackers from ambassador Frank Campanella are the ultimate bite-sized snack. Buttery crackers stuffed with rich, homemade pimento cheese and wrapped in bacon, then smoked until perfectly crisp. Fair warning: these disappear fast.

Steps

  1. In a bowl, combine the freshly grated cheddar and Parmesan with pimentos, mayonnaise, Dijon mustard, Worcestershire sauce, and seasoning. Mix until smooth and creamy, then cover and refrigerate for at least 30 minutes.
  2. Spoon a heaping tablespoon of pimento cheese onto a club cracker and spread evenly. Top with another cracker to form a sandwich.
  3. Wrap each cracker sandwich tightly with half a slice of bacon and place on a wire rack.
  4. Preheat your smoker to 300°F using Bear Mountain Hickory pellets.
  5. Sprinkle the wrapped crackers with BBQ dry rub, then place them on the smoker. Cook for about 1 hour, or until the bacon is crispy and fully cooked.
  6. Remove from the smoker and let cool for 5 minutes before serving.

Ingredients:

  • Bear Mountain BBQ Hickory Pellets
  • 1 sleeve club crackers 
  • 1 lb thin-cut bacon 
  • 1 TBSP BBQ dry rub 
  • 16 oz sharp cheddar cheese, freshly grated 
  • ⅓ cup Parmesan cheese, freshly grated 
  • 1 jar pimentos, drained 
  • ½ cup mayonnaise 
  • 1 TBSP Dijon mustard 
  • 1 TBSP Worcestershire sauce 
  • 1 TSP salt, pepper, garlic seasoning
