Steps
- Preheat your smoker to 350°F using Bear Mountain Gourmet Blend pellets.
- Slice the dill pickles lengthwise and carefully hollow out the centers, creating pickle boats.
- Season the ground beef generously with your favorite BBQ rub, then mix in the finely cubed cheddar cheese until evenly combined.
- Cut the mozzarella string cheese to fit inside the hollowed-out pickles and place a piece inside each pickle boat.
- Press the seasoned beef and cheddar mixture firmly over the mozzarella, completely covering the top of each pickle and securing the filling inside.
- Wrap each stuffed pickle boat completely with bacon, securing it as needed.
- Place the bacon-wrapped pickle boats on the smoker and cook for 45–60 minutes, or until the bacon is crispy, the beef is cooked through, and the cheese is melted.
- Brush the pickle boats with honey mustard during the final few minutes of cooking and allow the glaze to set.
- Remove from the smoker, let cool slightly, and serve warm.
