Steps

  1. Preheat your smoker to 375°F.
  2. Using your ground beef, shape 4 – ½ lb. burger patties and season with your favorite burger rub. Place on the grill and smoke until they reach an internal temperature of 155°
  3. While the burgers are cooking, get your bacon ready, it should be nice and crispy. 
  4. Once the burgers are cooked, remove them from the grill and chop into bite-sized pieces. 
  5. Fry up your diced onion and remove once soft. 
  6. Assemble your queso by adding the queso blanco, Colby jack cheese, cream cheese, fried onions, Rotel tomatoes, burger, crumbled bacon, cup of milk, and one packet of ranch seasoning. 
  7. Add to a grill safe pan and put on your smoker at 375°F for 30 minutes, stirring every 10 minutes. 
  8. Once melted and well combined, remove from smoker and serve with your favorite tortilla chips.
