Apple Cider Glazed Pork Chops

Serves: 3-4
Ingredients:
- 1 (1-2 lbs.) rack of pork
- 1 tsp salt + more to taste
- 1 tsp black pepper
- 1 ½ cups apple cider
- 1 cup brown sugar
- ½ cup molasses
- 1 tsp cinnamon
- 1 tsp nutmeg
- Bear Mountain BBQ’s Butcher’s Blend, available exclusively at Walmart
Instructions (for the apple cider glaze):
- Place a saucepan over medium heat. Once the pan begins to warm, add the apple cider and the next four ingredients, stirring as needed.
- Once the mixture begins to simmer, reduce the heat to low and continue cooking until the glaze is reduced to a syrupy consistency.
- Once this occurs, remove the pan from the heat and allow the glaze to rest at room temperature until the pork chops have finished cooking.
Instructions (for the pork rack):
- Preheat the grill or smoker to 500 degrees.
- Pour in Bear Mountain’s Butcher’s Blend.
- Slice the rack of pork into individual chops and season with salt and pepper on all sides.
- Once the grill has preheated, add the pork. Allow the medallions to cook until the internal temperature registers 140 degrees, flipping as needed.
- To finish, dip the grilled pork chops in the glaze and serve with your sides of choice.
