  1. Fire up your grill to the hottest temperature possible using Bear Mountain BBQ Lump Charcoal. Add Mesquite Chunks for extra smoky flavor.
  2. Generously season the bison strip loin steaks with your favorite steak rub.
  3. Place steaks on the hot grill. Flip every 30 seconds to build a rich crust on all sides.
  4. Grill until the internal temperature reaches 125°F. Going higher can dry out the meat and make it chewy.
  5. Remove from the grill and rest for 10 minutes before slicing. Serve and enjoy!
