  1. Preheat your smoker using Bear Mountain Cherry pellets to medium heat or 350°F. Season the chicken with salt, pepper, and garlic powder and grill them for 6-8 minutes on each side depending on their thickness. The chicken is done when it reaches an internal temperature of 165°F.
  2. Meanwhile, add diced bacon in a skillet over medium heat and cook until crispy. Remove and set aside. Cook the mushrooms in the same pan using the bacon grease until softened. 
  3. Just before the chicken in cooked through, brush on some honey mustard, then add mushrooms, bacon, and shredded cheese on each one. Close the lid of the grill to allow the cheese to melt for 1-2 minutes. 
  4. Serve the Alice Springs chicken immediately and garnish with some fresh chopped parsley. Make sure to add extra honey mustard on the side for dipping.

Ingredients:

  • 4 boneless skinless chicken breasts – butterflied all the way through
  • 2 tbsp olive oil
  • 8oz. baby bella mushrooms – sliced 
  • 4-6 slices of bacon – diced 
  • 2 cups shredded cheddar cheese
  • 1 tbsp salt, pepper, garlic powder blend
  • honey mustard – for basting and dipping
  • 2 tbsp fresh parsley (optional garnish)
  • Bear Mountain BBQ Woods - Cherry pellets
