Smoky chicken wings finished with a tangy, creamy Alabama white sauce. This classic Southern barbecue dish balances the rich smoke flavor of slow-cooked wings with a sharp, peppery mayonnaise-and-vinegar based sauce.

Steps

  1. Preheat your smoker to 250°F using Bear Mountain Gourmet Blend pellets.
  2. Pat the chicken wings dry and toss with olive oil, salt, pepper, garlic powder, and paprika.
  3. Place the wings on the smoker and cook for 1.5–2 hours, until the internal temperature reaches 175°F.
  4. While the wings smoke, whisk together the mayonnaise, apple cider vinegar, horseradish, lemon juice, black pepper, salt, and cayenne pepper to make the white sauce.
  5. Once the wings are cooked, toss them in the Alabama white sauce until evenly coated.
  6. Serve immediately with extra white sauce on the side.

  • 2 tablespoons olive oil
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

Alabama White Sauce

  • 1 cup mayonnaise
  • 1/4 cup apple cider vinegar
  • 1 tablespoon horseradish
  • 1 teaspoon lemon juice
  • 1 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon cayenne pepper
