Looking to make your ribs fall-off-the-bone and packed full of flavor? Then the classic 3-2-1 method is a good way to go. 

One of the most popular methods for smoking ribs, this method is a great option for backyard cookers. It’s also a great guideline to start with if you’re learning about how you like to cook your ribs. You will be left with tender, juicy, savory and sweet ribs that will keep your guests wanting more and more!

This method works particularly well for baby back ribs because they tend to be thicker and meatier. I would not recommend using this method for a thinner rack or for spareribs, as you can end up with an overcooked rib.

The method has three steps, each labeled based on the hours cooked.

3 Hours Smoked

The first step to the 3-2-1 method is to get a little smoke on your rack of ribs. Start the smoker at a low temperature, around 225°F. Season your ribs, and place them directly on the grates of your smoker with the meat side facing up.

This first step of the method is to get all of that delicious, smoky flavor on your ribs while they start cooking. This is the part of the process that will build the bark you love and give you that smoke ring on the inside of the meat.

2 Hours Wrapped

The next step in the 3-2-1 process is to pack in all of that flavor. Pull the ribs from the smoker and wrap them in foil to let them braise during this portion of the cooking process.

While you can simply wrap them, many cooks opt to add things like butter, honey and brown sugar during this step of the process to pack in all of that delicious flavor.

1 Hour Open

The final step in the 3-2-1 method is to unwrap your ribs and let them crisp up on the smoker for 1 more hour. Many people choose to flip the ribs over, sauce them and let that sauce get nice and tacky on the smoker during this step.

You can alternatively skip the sauce and just let the juices from the wrap tack up on the outside of the ribs too!

Once you’ve finished the last hour of cooking, you can remove the ribs from the grill and let them rest for a bit, then it’s time to slice in and enjoy these delicious 3-2-1 ribs.
